Of all our celery recipes, our absolute favorites at I·DO are minestrone and Tunisian chorba . Simply delicious! Even my children (4 and 6 years old) love them. We've prepared a classic and a vegan version for you.

1. Minestrone with celery sticks

Ingredients for 4 people

  • 4 chicken breast fillets (for the vegan version: 250 g carrots & 1 sweet potato in winter or 250 g carrots & 2 zucchini in summer)
  • 460 g white beans
  • 200 g celery stalks
  • 1 yellow onion
  • 4 tbsp tomato paste
  • 1 vegetable or chicken stock cube
  • 2 tsp oregano
  • 800 ml water
  • 2 tbsp olive oil
  • Salt & pepper

preparation

  1. Let's go!
    Bring the water to a boil and dissolve the stock cube in it. Drain the white beans and set aside.

  2. Fry chicken or vegetables
    Cut the chicken (or the vegetables for the vegan version) into cubes.
    Heat the olive oil in a large pot and fry the meat or vegetables for 3 minutes on all sides.

    Wash the celery stalks and slice them thinly. Reserve a few leaves for garnish. Peel and chop the onion.

    Add the celery and onion to the sautéed chicken or vegetables. Season with salt and pepper and sauté for 2 minutes.
    Then add the broth, tomato paste, and oregano. Stir everything well and simmer, covered, for 20–25 minutes.

  5. Add beans
    After 15 minutes, add the white beans and stir in gently.

  6. Serving
    Serve the minestrone in deep plates or bowls and garnish with celery leaves.

2. Tunisian Chorba with Celery

Ingredients for 4 people

  • 4 chicken breast fillets (for the vegan version: 1 carrot & 400g peeled tomatoes)
  • 320g wholemeal orzo pasta
  • 200 g celery stalks
  • 1 lemon
  • 2 cloves of garlic
  • 120 g dried apricots
  • 2 tbsp tomato paste
  • 1 vegetable or chicken stock cube
  • 2 tsp cumin
  • 1600 ml water
  • 4 tablespoons olive oil
  • Salt & pepper

preparation

  1. Let's go!
    Bring the water to a boil and dissolve the stock cube in it.
    Cut the chicken or carrot into cubes for the vegan version.
    Peel and chop the garlic.

  2. Fry chicken or carrot
    Heat the olive oil in a large pot. Sauté the garlic, chicken (or carrot) and cumin for 5 minutes, stirring regularly.

  3. Prepare the celery
    Wash and peel the celery stalks, then cut them into pieces approximately 2 cm long. Reserve the leaves for garnish.

  4. Cooking Chorba
    Add the tomato paste, celery sticks, orzo pasta, broth, salt and pepper to the pot.
    (For the vegan version, add the peeled tomatoes.)
    Stir everything well, cover and simmer for 15 minutes. Stir occasionally.

  5. Prepare the toppings
    Squeeze the lemon. If you prefer a stronger lemon flavor, you can also grate some lemon zest.
    Roughly chop the dried apricots.

  6. Serving
    Serve the chorba in bowls, sprinkle with apricots and celery leaves. Add lemon zest and a squeeze of lemon juice to taste.

Ingredients:

  • 1 bunch of celery
  • 100 g flour
  • 150 ml plant milk
  • 100 g breadcrumbs
